In Cajun French, the phrase, “laissez les bon temps rouler” means to let the good times roll. In Louisiana, people “pass a good time” at the fais do do (an all-night party), at the parish fair (county fair), at the camp (vacation home), at the parades (Throw me something, Mister!) and even at home with friends playing Bourre (a trick-taking gambling card game). One can have beaucoup (a lot) of good times at Gator by the Bay.

We’ve thought of all of the ways you and your crew (you gang/family/friends) can let the good times roll and here they are:

  1. Dance to Cajun, Zydeco, Rockabilly, Swing, Jazz, and Salsa using the dance moves you learned from our dance instructors.
  2. Walk off the delicious food (ca c’est bon!) you ate by visiting our vendor’s tents.
  3. Roll one of the kids down the hill and see if they squeal like a little cochon (pig).
  4. Lay out on the grass, spread out like a crawfish, and listen to some jazz.
  5. Get your face painted and go back to your favorite food stand to get fifth helpings with the complete confidence that they won’t recognize you from the four times before.
  6. Visit Mitch Olivier at the Crawfish booth in the Louisiana Food Court for a lesson on how to peel crawfish and then challenge a friend to a crawfish eating contest.
  7. Settle under a tree and count how many beans are in your red beans and rice.
  8. Call your vegan friends to let them know we offer vegan-friendly foods and that it’s ok to come hungry.
  9. Spend equal parts of time snapping selfies and food photos with being phone-free and soaking in the experience.
  10. Divide the number of hours in the day by the amount of bands playing, add the number of food vendors, and subtract the apparel vendors you’ve already visited to find out how many days you will need to come to see, hear, and taste it all!
